I'm thinking at the moment Streaky bacon done to a crisp scrunched up, scoop potato out mix with butter & milk mix scrunch in, replace in skins place under a v/hot grill until brown serve with green salad, BUT

I scoop out my jackets also......mix with garlic&herb philly-add some very strong cheddar...back into the skin and top with butter and grated parmesan & grill.....I could happily eat that most nights.

That sounds gorgeous pasta, haven't got any philly but will remember for next time. ThanQ

scoop out spud, add chopped fried bacon and some stuffing mix, cheese on top and....proceed to stuff face x
Sorry jemisa to butt in but I'm slightly perplexed in the scooping out the potato and mixing it before putting it back in the skin, I've done this several times and just ended up in a mess. Is there a certain technique in doing this?
Jemisa have you tried a large SWEET potato with cheese ? mmmmmmmmmm
Manana....don't over-bake your potato...and make sure you leave a bit in-don't scoop out all the way to the skin. You need a 'sturdy' shell to put your mixture back into.
This may have been the problem pastafreak I scooped out everything and mixed in a bowl with cream and chedder cheese as well as spring onions and the shell was just like a piece of soggy cardboard getting everything back into it, not the result I expected at all! Thanks for your tip and will try it the next time I have Jacket Potatoes.

Manana. Good tip from pastafreak, and don't forget you'll have more filling to put back after you've added your bits so pile it high then flatten a bit with a fork. Good Luck.

Just to let you know OH had chopped smokey bacon topped with cheese, I had cheese and onion. A meat free night.
