Hello everyone. I'm cooking my once-a-year dinner for 6 of us next Wednesday. I'd love some inspiration. I like to do something different each year. So far I have made beef Wellington ( a great success for 1st time), Beef strogonoff, stuffed chicken breasts, fillet steaks. I can't cook lamb because 3 don't like it - same with fish. I haven't done pork, but I was wondering about some sot of pork medallions. All suggestions welcome.

I love medallions of pork with lots of apple and thyme jelly served on a bed of creamy mash and whatever veg you like

I've just found a lovely recipe for stuffed pork medallions which I'm going to give a whirl. It's almost like a wellington - it has mushrooms and onions and sage and apples and sounds not too difficult. Thank you both.

Sorry Mortartube - "restaurant's" full this week, but I'll come back and tell you if it's as delicious as it sounds and then you can have a go yourself.
