Im cooking dinner for a wonderful girl next week, whom I'd like to impress. She says she likes all types of food, which is good. Any suggestions on what to make for a 3 course meal? Alternatively I coud just ply her with wine :-) just joking?

I would cook something that you like and are confident cooking so it will be alot less stressful for you so you can enjoy it as well. Sometimes trying to hard just leads to disaster. If my partner was to cook me such a meal i would love either prawn cocktail or pate on toast. maybe followed by steak and all the trimmings and finished with a chocolate fondue with fresh fruit to follow.
Prawn cocktail sounds good to me too. I make my own sauce using mayo, tomato ketchup and a little cream it tastes less salad creamy than the bought stuff. If you have a fishmongers you could ask if they have any scallop shells...these look impressive. Prawn cocktails should be served with a wedge of fresh lemon and thinly sliced buttered bread traditionally. Steak sounds dodgy to me...it is such a personal thing and you have to get it right. Chocolate fondue sounds lovely for dessert. Do you have something to keep the choc warm?
Or this is really easy and looks dead impressive :
Dessert. Make digestive case( 6oz crumbs and 3oz melted butter pressed into tin of choice. Mix two tubs of mascarpone cheese with juice of two limes and zest of one and 1 good tabs of icing sugar. Spoon filling into case and sprinkle on zest of other lime. Sounds too easy but tasted fantastic.
We had salmon cooked in the oven with new potatoes, vine cherry tomatoes and courgettes last night and it was yum - and ridiculously easy. You can get it ready beforehand.
Halve 10-12 small new potatoes, drizzle with olive oil and cook in the oven for 20 mins (180 c) in a largish, shallow oven proof dish. Add 2 branches of tomatoes (about 10 on each) and a large sliced courgette. Lay 2 salmon fillets on top and season with salt & pepper. Return to the oven for 30-40 mins until the veg is just starting to brown. Serve with some lemon wedges. Good luck!
