garlic preserves

QWe have garlic comming out our ears???? any idear what we can do with it to keep it. we are in new zealand, thus it is ready to harvest!

I guess when dug up, you could hang up in a dry,cool, dark place, like onions (make sure air can circulate) - whole, unpeeled. Or you could peel and separate cloves and store in jars of olive oil.
