Anybody got any really good recipes for Marrow, other than the usual 'stuffed' or ' 'rings with mincemeat' ones?

It can be good as a side dish, cut into small chunks, boiled, and still quite firm, then served warm with a dressing of lemon, olive oil and mint, for example.
