In a moment of supermarket madness I bought a whole duckling only to realise when back home that I have no idea what to do with it or serve with it. I'd be most grateful for any help with recipes or ideas.

I love duck and normally just prick it all over, rub salt in and roast in the oven on a rack. You may have to drain the fat off half way.

Then I sereve it with the usual Sunday roast accompaniments and a thin gravy.

If it is not too big and to serve only two, I cut it in half after cooking and serve it like that.

This looks interesting though and I shall try it next time:

Hal - that's an excellent recipe for duck breast off the bone (filleted) but not for whole duckling.

Sorry- that was for duck breast. Try this lot from Delia:

ethel - as you see I noticed!

Incidentally fran, you may get more results if you post this in the food and drink category.

Thank you both for your help with the recipes, there are several good ideas there. Thanks also Hal, I hadn't realised there was a food and drink category until you mentioned it.
