Buffet catering

I need to do a buffet for around 70 people and am trying to find a site with tips on how much food to do. Tried all the usual search engines with no luck. Anyone have any ideas?

Husband is a head chef of 35 years so give some idea of what you want to provide and I'll get him to come up with volumes for you.

Thanks for quick reply - just the usual things like quiche, sausage rolls, chicken legs, potato wedges, salads, french sticks, cheeses etc., just need a rough idea how to calculate how many per person (unless there is an easier way to do it)

How soon do you need this? Can give you his work email address or if you can hang on, I'll get him to work on it over the w/end.

The party is on 1st April this year. It is a combined 30th and 21st for two of my sons. It is at a pub hall so is only from 7pm to 11pm for approx 70-75 people. Thanks for your help.

Got info - here is a basic guide, for 70 people, upgrade items to suit taste etc.

Cocktail sausage rolls x70, cocktail sausages x140, plaice goujons x70, chix leg (cut each into 2) x35, chix dippers x70 or chix nuggets x140, quiche (12 ptn) x6, Scotch eggs (cut into quarters) x36.

Sandwiches 70 rounds, made up of 35 white bread, 35 brown, with 50% meat, 25% fish, 25% vegetarian.

French bread x4, cheese (average pack) x15, biscuits for cheese 1 kg. Butter portions - 2 boxes.

Crudites - 1 tray, plus assorted crisps, nuts etc.

Obviously this a very basic spread but it gives you an idea of the amounts required. Due to most of the above being the same colour (nicknamed the brown menu) it will need garnishing well if you leave it as is.

Number of vegetarians nowadays is quite high so it may be wise to stick to veggie friendly quiche.

Hope this helps, please feel free to come back with any specific questions.

Thanks for that, it was a great help and now I know how to judge the quantities for any other food. Please thank your husband for me too. Also, great tip about vegetarians - hadn't really thought of that!
