how do i make batter for battered banana or pineapple rings

Dont any exact quantities because when i used to make it with my nan she used to just guess everything. She was always right though!! You need about 200g of flour. 2 eggs. 2-3 tablespoons of milk. The consistancy should be that of double cream. If it's a bit thick - add water.
I'd recommend using rice flour instead of wheat flour as batter fir desserts. It's really light.
My recipe is as follows 8oz plain flour 2 eggs 1tbs oil (this is the important bit) any more liquid required use milk or water beat thoroughly best left to stand for about an hour dont make batter too watery make sure it coats the back of a spoon without falling off but not too thick either and all liquids are best used chilled definitely not hot
