Used to buy pre made but now will only make from scratch. I admit to only ever buying jars of tartare sauce but since discovering I didn't have any in the fridge one day and then also discovering I had all the ingredients in to make it I now only ever make it myself, plus I can make the exact amount. Only a little thing but think it tastes nicer. How about you?

I have cooked oven chips once and deep fried chips once in nearly 25 years!
it's having the steel, granite or marble top......

But I don't like mayonnaise. Would Heinz salad cream do instead? Also, I'm not sure what a shallot is. Is it the same as a spring onion (scallion)? I'm from the North, you know.

No...they aren't the same. Shallots are small onions that have a milder/sweeter taste.
Get over yourself DTC, Italian Nonnas have made do with wood for centuries.
Banana shallots are the best. Easier to peel and to chop.

Shallots roasted with sprouts with a squeeze of lemon juice is delightful.

Roasted shallots are delightful full stop!!!
Soup and bread.....can leave out all the nasties that go into shop bought bread etc. Oh and very good for letting off steam when you have foul neighbours!!!!
nothing that I always make from scratch... but soup and bread, pasta sauce and paella
Marie-rose sauce. Mine is, I am assured, wonderful!

Ooh you are all good!
Here's the mayo recipe, smow...
Into the container of a stick blender put ...
1 egg
300ml oil
Salt+pepper
1.5 (generous) tsp each vinegar ( I use cider vinegar) and grain mustard
Optional...garlic,chives,chilies
Place the stick blender at the very bottom...turn on and let blend for about 30 seconds. You should see the ingredients start to emulsify. Gradually raise and lower the stick as the mayo thickens...it should take no more than 1 minute depending on how powerful your blender is.
Scones, very quick and easy and much better than shop bought ones.
I sometimes work in the kitchens of one of the Cambridge universities , we make scones from scratch every morning a batch of 90 at a time. One time we had an event on and I had to make 300 of them !(then peel and cut up two full sacks of spuds for chips!)
I always make my own triple cooked chips as well , has to be Maris Piper nothing else will do !
EDDIE...do you peel by hand?
Or use a rumbler?
