Omelettes

i makle great scrambled eggs, if i say so myself, but i cannot for the life of me make an omelette. could someone tell me how?

what goes wrong with your omelette? All I do to make an omelette is to do the same as scrambled but stir less vigorously

that looks simply too complicated for me. sorry to be such a wimp but i never learned how to cook.

Crack 3 eggs into a jug or bowl, add a pinch of salt and pepper and add about half a mug of milk,
whisk it together,
pour into a lightly oiled frying pan, on a low heat,
Add whatever you like into your omlette,
Mr S and Baby S like chopped ham, peppers and onion.
light your grill,
cook on a med heat on the hob for a few min,
then pop under grill for a few min,
alternate these till cooked.
The omelette should rise and be nice and light.
it doesn't take very long at all, and the results never fail to impress.

Cheese and ham, or Cheese and onion is nice aswell.
Sorry Sparkles but you never ever add milk to the eggs for an omelette - just a splash of cold water. And never put it under the grill - it has to be done quickly on the hob, tilting the pan as you go, half omelette flipped over and then slid onto a plate while the centre is still slightly runny (carries on cooking after you take it off the heat so don't overcook it)
I don't add milk or water, just a little salt and pepper, sometimes not even that. My DH liked his put under the grill and I don't, also I don't flip mine, just fold it over the lovely baveuse centre....obviously horses for courses.
I'm with Woofgang on this. Only difference is I heat up butter in the hot pan and when melted pour most back into the egg mix, which is only lightly mixed. Whole process takes about 1 - 2 minutes. (Taken from Delia's recipe book.) Delicious!
I am a crap cook but I can do omelettes! I beat 3 eggs plus salt and pepper. I do add milk as I find it makes the omelette go a bit further, and makes it lighter and more bouncy. Heat oil (or butter) in pan and wait til it's bubbly hot. Pour in the mixture. Let it sit there for a bit and tilt the pan so it all gets heated up. Keep tilting it so the runny egg flows to the outside and gets cooked. I then add some cheese or whatever. Check the underside to see if it is golden brown. If so, fold one edge to the other, and you're done. Have a few practices!
You might poke me in the eye, but I made an excellent omelette in the microwave the other day. Whisk eggs, put in flat dish, zap.
