I've only had heart in faggots and haggis, but I'd be willing to give it a try.

forgive my ignorance - - - - chitterlings?
Oxtail, neck of lamb take some finding and marrow bones.

Kidney.............it seems impossible in my area to buy a decent steak and kidney pie. Steak and stilton abound but no kidney!

It's been a while since I had a bacon sarnie...

It has been even longer since I had any squirrel rillettes, but some here get a tad uppity when I mention it :-/
Boiled pigs head wiv chewy gristle & brawn. I found cold cooked in Polish deli
All my dear old mum's cooking.

But I miss the decent stuff like properly smoked bacon with rind, or crumbed ham on the bone that is properly dry. Seems to be added water (or something) to all today. Basic things like that. I suspect if one hunts enough and pays enough they must be still around, but the local stores, at best, seem to have pale imitations.

I agree, OG. I really cannot bear the 'ham' sold in supermarkets and most butchers. It's an insult to ham.

Cleaned,stuffed & baked (lambs are best if you can get them.) Delicious!!
Decent bacon that doesn't ooze white stuff when cooked

I'll try the lambs heart, then :) I probably had it as a child, we certainly had everything else.

You can't beat decent bacon that actually goes a bit brown and crispy instead of limp and pink, daisy
