Wouldn't that just be freezing a potato?

Why would you even do this?
If you mean cook a batch, the just cook them as normal and slightly undercook them and then freeze them as normal. Theyre not the nicest things though.
You would need to cook as per normal, cool completely and then freeze, however I would experiment as i have a sneeking suspicion that domestice freezers are not cold enough to freeze the potatoe quick enough.
I have tried freezing home made loaded skins before now and they were bloody disgusting when defrosted. They went in the bin.

That's probably why ours were vile then FGT :(
they do not have an industrial freezer.

I bet they buy them already frozen!
They sell frozen loaded potato skins in my corner shop and they are quite nice.
