Recipes for Vegetables

I've got a question and a suggestion together.

 

I'd really like to do other things with vegetables besides steaming/boiling/roasting, so if anyone out there can give me any recipes I'd be really grateful. I have lots for potatoes now though, and here's one of my favourites - Garlic Roast Potatoes:

 

Prepare pots as normal, then toss them in a bowl of garlic paste to coat them. Toss them in another bowl with brown sugar, then roast in the oven as usual. I'm not normally a garlic lover, but the sugar takes the edge off it for me and they're very tasty.

griddle some asparagus, courgette slices, red of yellow pepper slices in a hot griddle without any oil, now you can chop them all into bite size pieces and stir into couscous that you have softened by covering with cold water and make a dressing with olive oil, lemon juice and red chilli and stir in lots of coriander or you can keep the peices whole put them in a bowl still warm with mixed salad leaves thick slices of ripe advacado and crumble over feta cheese and dress with olive oil. There are lots of things to do with these veg, add to a tomato sauce and stir though pasta, use them instead of roast veg as a side dish, let you imagination run wild.
