hi, anyone got any good ideas as to what i can make for tea with chicken thighs?

Chicken thighs, peppers, onions and gnochi, chunky chop onions and peppers and place in a deep roasting tin, put gnochi in with it and drizzle with olive oil, place chicken thighs on top and sprinkle jerk seasoning bake in the oven.
I score the chicken thighs and add equal (large) measures of mustard powder or moist to honey some salt pepper and garlicand some lemon juice then roast until cooked thorugh (45 mins) or 50/55 if on bone. I like to serve this with a nice salad, or cut off the bone and dd to wraps, with come craine fraiche.
Mix up a paste of 1tbs ground cumin, juice of a lemon, a good tbs honey, couple of crushed garlic cloves. Slash the chicken and smear the paste over, put in a shallow roasting dish with a glass of wine and a couple of bay leaves. Roast until done adding more wine or stock as necessary to give a little sauce, sauce can be enriched with a touch of cream or creme fraiche if you want.

Mix up chopped garlic, chopped red chilli, zest and juice of a lemon and some honey and coat the chicken before roasting.

Marinate in soy sherry/rice wine and a little chilli. Serve with satay sauce.

For quick tandoori chicken mix up some yogurt with curry powder/paste a touch of fresh ginger and crushed garlic, marinate the chicken before griddling.
JO does quite a nice quick piri-piri chicken. 1/2 an onion, 2 cloves garlic, 1 red chilli, 1tbs sweet smoked paprika, zest & juice of a lemon, 2tbs white wine vinegar, 1 tbs worcester sauce, fresh basil. Blitz everything adding a little water if necessary.

Brown chicken in frying pan, fry off chunks of pepper, put both in a shallow oven dish pour in sauce. Bung in oven 'til done.

His jerk chicken is pretty good too but it has lots of ingredients that you might not have to hand.
Baked Spanish Risotto:

250g cherry tomatoes
1 red onion finely chopped
2 garlic cloves finely chopped
2 tbsp olive oil
300g risotto rice
4 chicken thighs,halved(bone removed)
200g thickly sliced chorizo
2tsp fresh rosemary
1 litre hot chicken stock
pinch saffron
8 large raw prawns
salt/pepper


1.Preheat oven tp 220c.Put cherry tomatoes in roasting tin and sprinkle over the onion,garlic and rosemary and oil. Roast for 20mins until tomatoes are softened.

2.Stir in the rice,chicken,chorizo,rosemary,stock,saffron and salt/pepper - mix well.Return to the oven for another 20 mins.

3.Stir in the prawns and return to oven for further 10 mins, until rice in tender.


Dead easy and delicious. maybe too late for today but well worth doing another time.
