what goes with Courgettes?

I've got some nice Courgettes and fancy making soup.I do make soup often but have never done Courgette. Would tomato go nice with it? Or roasted peppers?

Both would go well. You could try chopping all ingredients up together even add some onions and garlic, and roasting them in oven with some seasoning and olive oil . For about 30mins or until cooked before liquidizing with additional water.
Brie might work well because that's quite mild as well.

I usually do carrot and courgette ribbons. Courgette is also nice grated in a salad...
You need the onions
Add onion, garlic and potatoes with some basil, oregano, chives and blitz with a little cream .... serve with parmesan croutons (little heaps of grated parmesan baked on low until set and golden) Yum!
I just do courgette soup on it`s own as the flavour is quite delicate. I do start off with a finely chopped shallot though. Saute shallot and sliced courgette in butter to sweat. Then add a mix of chicken stock and veg stock. I add white pepper and salt to taste and that`s it really. You could add a little garlic. Then blend in blender.
Avoid toms. ..... as said above, will totally overpower imho
Oh yes, I forgot. I stick a sliced potato in to add thickness.

Sorry I should have said: I always start any soup worth onion garlic and celery leaves, then add the main veg with stock. I made a celery, white onion and fennel last week. It was delish! I was concerned that Courgettes on their own would be dull.
My Grandma makes carrot and courgette soup. I don't know her recipe though, sorry.

Sliced courgettes boiled in water with a beef OXO cube, cubed pre-cooked potatoes, peas, broccoli chunks and a dollop of real butter. The courgettes and other green vegetables cook really quickly, so pre-cook the potatoes.

Leave the tomato and peppers out, they can go on your pizza.
(Personal dislike of red food mixed with green food.).
Personally I would leave out the Onion Garlic and the Fennel in this context. If you like all your food tasting the same then adding Onion Garlic and Fennel to everything would be perfect.
Courgette and mint soup is delicious especially with a little feta or goats cheese crumbled on top before serving.
I make a tomatoe based suop with courgettes, it will be fine.
alternatively you could make a simple courgette curry. Butter curry paste courgettes...simple quick and tastes beautiful.

good grief methyl! It was white onion, fennel and celery soup! I don't put those ingredients for every soup! what are you on about?
Courgettes don't really taste of very much, but a nice addition would be to add Philadelphia or The Laughing Cow cheese when liquidising the soup.
