If you have a slow cooker,why not do a hotpot with them? Layer in sliced onions and potatoes-followed by the pork chops,and finished with more potato and onion. Season well,add a small amount of stock,wine or tinned tomatoes,and leave to cook for several hours.
Make a sticky marinade with mustard, olive oil and balsamic vinegar.
Smother the chops with it, leave them to stand for a while, then grill (quite slowly) until just cooked through - then turn the grill up to 'turbo' and flash them for a short while on each side.
