basic cupcake recipe

I have self and plain flour, sugar, butter, semi milk, icing sugar, vanilla essence, baking powder no fruit really I have a chocolate fondant topping I could spread on.

But I am looking for a basic recipe one which is light and airy and creates nice tall cupcakes, I have a profession mixer I can use

I want to make quite a few in batches for a small party.

I often find the paper case comes away from the cake after it has come out of the oven and cooling why is this, is it the cheap paper cases or something else? I put the paper cases into muffin tray recesses so the paper cases are held during baking.

2 eggs..... Xx
Ps: cream marg& sugat, beat in eggs one t time, add little flour with egg, fold in gently remaining flour 20-25m @ 180 xx

any idea why the paper cases pull away from the cakes?
Mabye your using too much mix in the cake case?? I use a teaspoon or two....not sure though!!!

Thats a really nice cake...mite not need as long as that though as i use that time for a sponge sandwich ....xxx
