its a jar of grilled peppers in oil...but it says, da consumarsi preferibilmente entro il: vedi capsula

google translate says - to be consumed pereferably... then it changed to best before you see the capsule...!

what does that mean?

can anyone give a better idea of how long i can have them after opening?

they are di vita brand

it probably just means eat by the date on the lid.
i'd open them and then put them in the fridge and continue using them until they go mouldy.
It means consume before the date on the lid (if there is one!)
I do like ethandron's suggestion though!
it means see the date on the lid/jar
'Vedi capsula' translates as '(you) see cap', ('vedi' being the 'you, singular', form of the verb).
