Can anyone explain why my beard starts to itch after a weeks growth?

Beards are like that. If you really want to grow one it will pass in another week or so, but if you want designer stubble, you might simply have to live with it

after shaving any part of your body the hair re-growth has a stubbed end, whereas unshaved hair has a tapered end.

Re-growth is the thicker hair stem bursting out of follicle that causes the itch. Use hair conditioner to soften re-growth.
