Safe Freezing

Daughter's wedding coming up. I am cooking chicken liver pate and Coronation Chicken. Can I freeze cooked chicken and defrost it and put it straight into the sauce on the day and can I successfully freeze pate? I may not be wild about all the guests but would rather not be responsible for food poisoning!

you can freeze cooked chicken (once it has cooled sufficiently). Make sure its defrosted thoroughly before doing anything with it. check the food standards website which i think is www.eatwell.gov.uk. should find the info you need on there
