In an effort to be healthy, I bought a pack of cous cous, but now I don't know what to do with it as I've never tried it before. Is there anything it works especially well with? And anything it doesn't? Someone here's already asked what you can mix with it, but I want to know what to serve with it on the same plate.

Many thanks!

i normally have it with some roasted vegetables(courgettes, onions and peppers with olive oil and basil) or i fry off some garlic, onions, cumin and chicken and add a tin of tomatoes and you have a gorgeous moroccan chicken. you can also do this with lamb.

enjoy

I just treat it exactly the same as I would rice, cracked wheat, pasta or potatoes - as the "carbohydrate" part of the meal.

Fry up a load of your favourite chopped vegetables in a little oil, add some spices and herbs, tomato puree and water (or tinned chopped tomatoes) and let it talk to itself over a gentle heat for half an hour or so (whilst you open a bottle of red wine and add a glass to the pan). Meanwhile, just prepare the couscous according to the instructions on the packet (probably just add boiling water and let it stand). Nice when served up with a warmed up naan bread or tortilla.

Use cous cous to replace rice, or potato. Nice as a base for simple fresh dish, like fish, lamb, poultry. Carries other flavours really well, so add spices and plenty of seasoning. Also works as a base for salads.

Info on the use of it here: http://www.recipes4us.co.uk/Cooking%20by%20Country/Couscous.htm and you can search for more recipes on that site too.

Thanks for all your ideas! I'll definitely give some of them a go, especially the Moroccan chicken one which sounds fantastic, so thanks to bellasasha for that one!
Salmon.

We have it at least once a week purple-eth. This is the favourite mixture. : I serve this with Chicken breasts or boneless Pork chops.

8-10oz couscous, 2oz pine nuts, toasted, 8 ready to eat apricots snipped, red pepper roasted de-skinned and sliced in strips, grated lemon and juice. Use a couple of Knorr chicken stock cubes instead of water if liked. Lots of chopped Parsley to garnish.

I do a version of Cetti's recipe with the apricot, and lamb pieces that have some hot and sweet spices in.

I would always cook couscous with veg or chicken stock as its quite bland. I also put a bit of butter in when I fluff it, but that's cos I'm greedy!!!
