My friend wishes to learn how to ride a bike but does not have the confidence. I wondered whether stabilisers would do the trick. Can only find stabilisers for wheels up to 26inch.

Don't bother with the stabilisers.
A friend of mine took her kids for cycling lessons and the way they taught her kids how to ride their bikes, was to remove the pedals. The kids simply pushed themselves along by sitting on their seat and pushing themselves with their feet. After a week or 2 of doing this, the kids had got used to the balance of the bike and when the pedals were replaced, they managed to use the pedals and cycle normally, almost immediately.
Excellent suggestion from Gizmonster. We were walking along the promenade at Bouremouth this morning and came across a very young child (looked about 2 years old to me) scooting along on a tiny bike with no pedals. He then amazed me by picking up his feet and coasting along with perfect balance.
Leaving the pedals on will only get in the way for your adult friend BUT remember that one pedal has a left-hand thread and one has a right-hand thread.
