Plain flour. Measure out equal amounts of flour and butter. Melt the butter and then add the flour and keep stirring for about 2 mins. I suppose overdone cauliflower baked in cheese sauce is ok as it blends well. I wouldn't want it over done just on its own though.

What is it for, cheesy leeks?
He won't eat it on its own so i don't mind over cooking it a small bit.
I make cauliflower, broccoli and potato cheese. Makes a complete meal so I don't need anything else with it.

UMMM.can I freeze cheese sauce ?
Kate, when I make the cheese sauce topping for tuna pasta bake, I portion it out and freeze it. It seems to be fine when I heat it up.
