Finishing a table surface

We have an old table that we want to use in the kitchen; the varnish on the surface is in pretty bad condition. What would be the best treatment for a durable and easy-clean surface? Sand it down and oil it?

Sand and re-varnish or keep it plain wood and scrub it.
I agree with stanleymans first suggestion, sand it down thoroughly and give it several coats of good qaulity polyurethane for a trouble free wipe-clean surface and no chance of tea stains etc..
