Easter Sunday is the first Sunday after the first Full Moon on or after the Spring Equinox. Although the date of the equinox is fixed, its the date of the full moon that changes and that changes Easter Sunday.

The explanation given by sddsddean is for Western Christianity. Another method is employed to calculate the date in Eastern Christianity.
