Gammon joint and duck

I'm going to be cooking gammon for xmas dinner....we wanted something a bit different to normal sunday roast meats.
Today, it will be marinated in cider and then slow cooked in cider with some honey added later. Chunks of apple will go in too.


Then for boxing day, we're having roast duck. Roasted in the oven so the fat can drain away easily, i will prick the skin all over and then add caramalised orange slices. A "sauce" of melted orange marmalade will be added for the final 20 minutes.


Do you have any suggestions, tips, ideas, additions etc etc which will make these foods even better !!!

Oh....and what are you lot having ?

All sounds delicious to me and certainly not in need of any improvement. And just savour that scrumptious duck dripping. It may be loaded in calories but it's absolutely divine on toast, and for once, who cares - Christmas only comes once a year so we're all allowed a little indulgence. Bon appetit !
