Due to a large surplus of fresh eggs I have taken to making Spanish omelets which we love, however we would like to put cheese in the omelette rather than melting it on the top, would this addition make it stick to the pan due to the longer cooking times compared to our traditional omelette?

Dicky, are you actually a cook? its a Spanish omelet, you don't fold a Spanish omelet.
Ratter, I know you don't fold a spanish omelette, I merely pointed out that if it was thin enough you could fold it. It would thenncapsulte the cheese in the middle. As you know there is no cheese in a traditional Spanish Omelette

Dicky, I think you would find that any attempt to fold a Spanish omelet would result in it just breaking due to the potato but thank you for your input.
There was a cookery prog on ITV on sat morns a few months ago with Nadia Sawalha hosting, and one chef produced a spanish omelette using potato crisps as the potato component. He didn't fold it but I bet he could have done if he had tried.;-)
If cheese doesn't stick in a normal omelette I don't think it will in a Spanish one.
lol why do i get the feeling you' going to go and make a spanish ommlette and fold the damn thing just to prove it.....

i would add the cheese to the egg mixture and cook as normal with a flash under the grill if needed
what differentiates tortilla from S.O. dicky?
When i do it i cook red onions, cubes of potato, chorizo and green pepper then add eggs and put paprika on the top - is that tortilla or S.O>?
All I can see is that this thread is now a risk to becoming well and truly scrambled.
They are the same thing, I think.
OR over egged
The use of the Flip or the oven. The tortilla is denser than the omelette.
I add cheese to the mixture, then sprinkle some on top of the omelette in the last few seconds for extra cheesiness.
