thank you factor30 and glasman . baldric I did discover that there was a big mistake in the original for 23a .The quotation from Mark from Mark Twain had nothing to do with the clue ,which I did solve. Thank you, Lorus

So have they also messed up by saying it's 3,4?
The clue actually reads:-

23a Something fried quickly at high heat but in a little oil/fat is said to be ______ (7) confidence; then success is sure", Mark Twain (3,4) S?U?E?D

so not sure if its a 7 letter word or 3,4 either way I stumped

I think the 3,4 answer from the messed-up Mark Twain quote would have been YOU NEED
('All you need in this life is ignorance and confidence then success is sure')
Apart from the S it would fit in your spaces.
So it's either SAUTEED or YOU NEED, depending on which you think was the intended clue.
