Lunging on the opposite reign to the one he's crooked on. Not too much though or you will make him go too far the other way and build up too much muscle on one side.
A good canter is all about balance. Work on walk and trot keeping him/her supple and in an outline so the back muscles are being used. Also get a good teacher to help or an experianced rider friend to watch you as often it is us that makes the horse uneven and it takes someone on the ground to see where we are going wrong.
First of all, you need to determine why the canter is crooked. Watch your horse in the field or loose school and check whether he looks crooked. If he does, it's him so try lots of circle work and/or perhaps get an equine osteopath to take a look. If he doesn't, try lunging with his tack on and see whether he is crooked now. If he is then get his tack professionally checked, if he isn't then it could be your position and aids that are causing the crookedness. Get some lessons or a friend to film you. I naturally ride with my left hip collapsed and so much more weight down that side. Amazing the difference in the horses movement when I consciously balance my weight!
