Maria had a brilliant case for constructive dismissal if she had walked out; she had been in the job for only a couple of weeks but was made to complete negotiations for a major contract, she was then left 'in charge' and expected to fulfill the contract on time. She had little or no training yet was humiliated in front of the workforce when she had to renage on the promised 'bonus'. (This the workers seemed to accept without question!)

You don't need a written contract for a contract to be in force.
