I want to record some guitar and some singing on top of that, dead simple really with maybe a few extra tracks ontop. I've got a copy of Adobe Audition 3.0 but that just gets over complicated and i just feel like it's blocking my creative flow if you get me. if you can help I'd be buzzing..

If you only need a few tracks have you considered buying a 4 track tape recorder? They are very easy to use, very cheap these days (you could probably pick up a 2nd hand Tascam Portastudio for as little as £50) and the sound quality can be very good. Analog beats digital every time in my book. I have a Tascam and have produced some amazing quality recordings.
My advice is this - stick with Adobe Audition, maybe get someone over to operate it while you get on with the singing/songwriting bit. I use it a lot and once you've got past the basics it's not to difficult to use.
