She reads occasionally... John Grisham was her fav the last time I saw her read!!
Tickets for a show?
A food hamper of all of her favourites, a digital photo frame.
Spa weekends can be expensive. My gym does pamper days...
Me and OH were given pamper day vouchers by our son last christmas. We had a fabulous day at one near York. So good that we went again later in the year for which we got discounted
You don't give a budget, but as 51 year old mum, here's what would be on my ideal list:
-ebook reader
-Nintendo DS
-tickets to a gig/show
-an antique (and I don't mean your dad) - these are good because they're unique and there's something to suit every budget.
-iPad/iPhone
-one those make-up and photo sessions that make you look like a hollywood star
-a musical instrument to take up
-golf clubs/camera/paints etc., something to spark off a new hobby or get back to an old one.

Failing which, ask her best mate/partner/sibling if there's anything they know whe really wants or likes.

Dogs are far less trouble than kids, certainly. Do remember, though, that a dog isn't just for Christmas ...

Im 50 plus and my favourite surprise pressy was a pedicure and foot massage ,fab, and not too expensive either for the buyer
