Because of the latest financial crisis in Spain, how safe is any money invested in Santander UK?

You have the same protection as any other bank. Unless you have £50,000 (or is it going to become £70000 soon?) then all your money is protected.
But there is no way anyone would allow a collapse which would leave people out of pocket.
In reality if Santander were to collapse then the whole financial system would have collapsed too and society would break down
