freezing egg noodles and beansprouts

The packets say not suitable for freezing, but how much taste/ texture do they lose? Or would they even give you food poisoning if frozen?

There isn't an asian delicatessen anywhere round here.
It’s not a good idea to freeze bean sprouts. Due to the high moisture content, freezing them would burst the cells in the sprout, leaving a soggy, mushy mess when thawed.

I live in a little village! Plus i've never seen one in either of the two nearest towns. The only specialist food shops there is are; bakeries, posh chocolate shop and a polish delicatessen.

You're going to have to leave your little village.
I can't help you with noodles, but often freeze beansprouts- we too are a 2 person family. The secret is to remove the beansprouts from the freezer just as you need to cook them. If you remove them earlier they do go mushy as someone else has suggested.
