i had deep fried carrot and beetroot too

lovely!
Maybe try parboiling it? Just for a minute or two.
Make sure it's well dried before you put it in the fat though.
I'll go for that, Lottie, stringy and tough sounds better than my present state fat and tender;-) Gotta go, Exile on Main Street on the telly any minute but joko I hope you get some good replies:) Bye guys:)
Night Swedie.

Hope you sort your problem out. Can't imagine deep fried Swede actually. x
As mojo says I would certainly part-cook it if I was going to try frying it. Deep-fried sweet potato is nice as an alternative to potato chips. As is fried parsnip, but you definitely have to cook that first. Aldi does an excellent pack of vegetable crisps made of finely sliced and fried beetroot, parsnip some other veg I forget...
Why would anyone want to deep fry veg. Surely most of the vitamins would be lost, plus you have the fat or oil on them. Fresh veg should be steamed so they are a tad crunchy.
Must admit I like roasted veg in olive oil, Mediterraneon style. Had some tonight - mixed peppers, sweet potatoes, plum tomatoes, courgettes and red onions. They were still crunchy and delicious.
T'wood appear I am in the minority then. Never mind each to his own.
If you are determined to deep-fry it I would suggest part cooking by boiling first. Remember to dry it before frying.
