Shiny High/Lowlights - how to get them?

Hi everyone, I'm about 50% grey these days. The last time I had highlights/lowlights, they were sort of caramel and honey blonde colours supposedly. They were done in packets with an all over colour in between. The problem is, my hair colour looks very flat. The other day I saw a lady in the street with very pretty highlights. They were very shiny and healthy looking. She was also middle aged and they didn't look weird of anything, just bright and shiny and healthy looking. I didn't quite have the nerve to ask her where she'd had her hair done. Wish I had now. Is there a particular brand of hairdressing dye that would produce this kind of results does anyone know. Or can anyone recommend the best way of making my drab hair look a bit more lively... without going down the mutton dressed as lamb route :-) I know that you guys are very knowledgeable about these things. Thank you. Ooooh PS I live in the west midlands, near Evesham/Tewkesbury/Cheltenham. Don't suppose anyone knows of a decent hairdresser in this area. Or even Bristol would fine as I visit fairly often.

best stylists come by recommendation - ask when you see someone with a style you like. or, take in a picture of the style you want (photo ppls hair with your mobile).

Grey can be any base tint from your stylists color chart. hilites/lowlites can be included at same time to break a dense color. Shine products & sptriz give the healthy, groomed finish when styling.
If it helps, I work in Bristol and have my hair done at Paul Stein at the bottom of Park Street tel 01179264400. I'm probably more tham 50% grey and they do my highlights beautifully.
