What sort of quality recording can you get if you are taping from a VHS Player to a DVD Recorder via a SCART? Do you get "Ghosting" and wobbly colours that you used to on VHS to VHS copies ( via SCART ).

Please note that I am talking about my own VHS tapes and not films.

I record my old VHS tapes onto DVD and have had no problems at all. The DVD only records what is being produced on the TV screen, so providing the VHS is a decent copy, you should end up with a decent copy too.
