We recently hired a manager for our business, it didn't work out after several months so it was a mutual decision for her to leave.
When she started, on her first day she had a blank diary which she purchased herself to take notes, etc. In the time she was with us the diary was filled with all our contacts, takings and employee details. Also, notes from an expensive management course we sent her on.
Do I have a right to ask for this book back?

I think this depends on what the employee details are exactly that she has. Whether you ask for the book back or not seems a bit pointless as she could just photocopy it anyway and keep the copy but she shouldn't have confidential employee details.

It may also be possible to get money back from her for what you paid out for her course (or a portion of it), though this would and should have been agreed with her in advance or been written in her contract.
