Recipes for Potatoes or Rice

We're having Chinese spare ribs for supper tonight (my husband doesn't finish work until 11pm this week) and I'd like a tasty potato or rice recipe to accompany them. Sorry it's such short notice, but can anyone please help?

 

If you read this and it's too late for tonight, don't worry, any suggestions will be useful in 3 weeks time, the next time he's on this shift.

 

P.S. Thought I'd already posted this but it hasn't appeared yet, so it's either been held up somewhere, I've posted it in the wrong section, or I didn't click submit. Sorry if it ends up appearing twice!

Boil pots as usual.
Drain and remove from pan.
Melt butter in pan.
Add paprika.
add cooked pots.
toss and serve.

Pilau rice recipe from my asian neighbour, foolproof'

2 Cups Basmati Rice

4 Cups water

Frozen mixed veg

2 Cinnamon stick

1 Onion - large

2 cloves of garlic - optional

salt to taste

Fry the onion and garlic (if using) until see through. Add the mixed veg until beginning to cook. Add the rice and stir it all around to thoroughly combine. Add the salt and the cinnamon. Add the water. Stir well. Cover and cook until all the water is absorbed. Check regularly to see if any more water is needed to finish cooking the rice. Add boiling water if needed. When the rice is cooked, remove the cinnamon. And serve with your spare ribs or curry or chicken or salad. Any left makes nice rice salad.

Very simple recipe. Peel pots and cut into small pieces. Put in Saucepan with butter ( or Similar) and quantity of turmeric (amount depends on how much you like it- about half teaspoon would do for 2) and fry pots for 5 mins stirring all the time.

Add water to cover, chilli powder (again depends on taste) and boil with lid off until pots cooked, and most of water gone. Simple Bombay potatoes.
