thank you.
Try this:-
3 tbsp sunflower oil
3 cloves garlic, very finely chopped
1 inch ginger, peeled and very finely chopped
3 tbsp plain flour
3 tsp curry powder
1 tsp salt
1 tsp chilli powder
1 tsp paprika
 tsp ground black pepper.

1. Mix curry powder and flour and keep aside.
2. Heat oil.
3. Add ginger and garlic and stir fry for 1 2 minutes
4. Add flour mixture and allow it to bubble.
5. Add salt, pepper, paprika and chilli powder. Stir.
6. Add enough water, a little at a time, to get sauce consistency. Bring to boil and simmer briskly for a few minutes. Add more water if the sauce becomes too thick. Remove from heat.
If it's the yellow sludge from the chip shop, it's from out a packet.. trust me, I'm chinese and I've seen it...
I've ben using this mayflower curry mix religiously for about a year. You can't beat it. Just add water and simmer it for 2 minutes with some chicken and onions.
