What happens if you are sued and your insurance doesn't cover you. Also what happens if you can't pay the money because you have no assets or savings

There are several options, including a garnishee order on your wages so the money is repaid over time directly from your wages.

Otherwise, it is just tough on the person who is owed the compensation, because he or she will get nothing, although the judgement will be there and can be enforced if your circumstances change.
