Food eaters - I want to make some circles of chicken breast meat to form a fancy tower type dish. Any advice on how to do this? My thoughts were to slightly flatten the breast, then use a cooking ring to cut a circle, then pan-fry. Or would it be easier to cook the boobie first? Or are there any other ingenious solutions that I haven't thought of? Cheers!

I would've thought it would be better as you said to hammer/flatten the chicken and then cook,but after you pan fried it i would be worried about the shrinkage changing the shape,one sure fire method to get the perfect shape would be to ask your butcher to mince the chicken,this way you can stuff enough of the finished mince mixture into the cooking ring that the shrinkage would have no effect and you end up with the perfect circle.
flatten a few chicken breasts out and lay them one on top of the other, maybe putting something between the layers like fried finely chopped onion and mushroom, or ham, then roll it all up in cling film (like a swiss roll). put another layer of cling film round it then poach the fat sauasge you now have in hot water to cook it. when it cools you'll be able to slice it up very nicely into rounds.
