Anyone got buffet ideas for a gluten free diet please? I am catering for 15 and need some gluten free ideas that others will enjoy as well.

I'm gluten free too and this is some of the foods I do for buffets.

Rice salad.

Cooked rice, grated carrots, chopped celery, quartered cherry tomatoes,spring/salad onions, finely sliced radishes, tin of sweetcorn, chopped red and green peppers, handful of raisins.... mix it all together with a good dollop of mayonnaise :)

Pasta salad:

Gluten free pasta cooked in garlic and parsley. (I have found the best make to be TruFree or Doves Farm.)
Cool the pasta. Then add chopped red onions, cherry toms quartered, chopped cucumber, sliced celery, sliced radishes, sliced peppers. Then add sliced sundried tomatoes (Sacla in oil) mix it well, then crumble over Feta cheese. You can finish with fresh flat leaf parsley if you fancy :)

I do Chicken Flautas and serve those with home made salsa and guacamole....

Boil up some chicken breasts, with a couple of fresh bayleaves if available, if not use dried. A chopped onion, and some garlic cloves.
Once chickens cooked, drain and shred the meat. Doesn't matter if onion is in it.
Once cooled add a tub of philladelphia cheese, and some spring onions.
Spread the mixture into Corn tortilla wraps (tescos etc sell them) and roll them up.
Deep fry them till golden brown (minutes)

Let drain on kitchen roll, till cooled.

These are great dipped in guacamole.
Guacamole:

Ripe avocados, mashed. Add a tub of soured cream,and a jar of Salsa. Season. If making in advance, place a avocado stone back in the mix to help prevent discolouration.

Home made Salsa:

Tomatoes, chopped. Red onion chopped. Jar of sliced Jalapenos. Garlic, finely chopped or crushed. Fresh coriander. Squeeze of lemon juice. Splash of tomato juice. Mix it all together, add a bit of juice from the jalapenos. Season. Leave to marinade over night.

I think Cottage Pie always goes down well at a buffet, plus my gluten free auntie, always makes a mean kedgeree and a good paella at her buffets so I assume they are gluten free.
