Where do these come from? For example, why are Irish people perceived as stupid in jokes, and why do people say the Scots are tight?

Don't know. It is stupid.

Whoever started it all off was obviously having a

blonde moment.
A question of major significance .
I don't agree with it either. Whoever they were who started these rumours must have been as thick as thieves.
Just to prove the point, I am not black but I am hung like a horse.

That is not concrete proof.
All nationalities take the micky out of other nationalities.

In the U.S. they make jokes about people from Poland being thick.

Example:

A Pole, an American and a Canadian are on top of the Empire State Building. The American tells the Pole that if he jumps off he will hover, but won't fall. The Pole looks sceptical so the American jumps off, hovers for 5 mins and then lands on top of the building again. The Pole then jumps off the building and plunges to his death.
The Canadian turns to the American and says
"Superman, your sense of humour is sick."
Can you stick your manhood in your ear, and pretend to be a petrol pump ?
