I'm sure I remember being told once that the positioning of an effigy on a tomb and the animal they are depicted with indicates the way they died. Anyone got any knowledge?

I think they were intended to depict a sentiment such as valour or loyalty or to reflect the life/hobbies/skill of the person entombed rather than amethod of death. Some do of course, here are some ideas.....

I think Octavius is right. The animal symbolises the person.
Usually a little faithful dog, at the foot of the wife, and a little brave roaring lion at the foor of the husband / knight
