I take it that you mean the British island of Jersey rather than the city in the USA...if so, it is because a very common dish there is a sort of cassoulet made of different varieties of bean together with meat, especially pork.

In the same way, people from Liverpool are called scousers, because of the dish, lobscouse, that was frequently eaten there - and by its seamen - in its glory days as a world port.
