I went to school in malvern. We used to have butterscotch tart for school dinners. ( as did everyone i suppose) there seems to be a variation in recipes. I now work in surrey as a catering manager at a primary school and the recipe for butterscotch tart here is totally different to the one i remember from my school. Does anyone have a recipe for a butterscotch tart which from what i remember seemed to be quite custardy in texture. I remember scraping the mixture off the quite revolting pastry ( still very fussy about my pastry now) Would be very grateful if anyone has access to any old recipes

This recipe was given to me years ago by a school cook. It has been scaled down & this is for 8 portions.
Precook pastry case. Melt 4oz margarine. Add 2.5 fl.oz milk & boil. Add 4oz demerara sugar & 1oz plain flour & heat stirring until sugar is melted. Put into pastry case & cool.
