Can anyone please tell me if whipping cream can be frozen and defrosted successfully so it can be added to make cream of broccoli soup ? I've read back on the answerbank Q & A, but found rather conflicting replies.
I don't want to spoil the soup, so wonder if anyone has done this recently.
Thanks for any help.

Yes, it can. We've frozen whipping cream (actually, we've frozen whipped cream as well) and reused it. It's best not to plan on having it remain frozen for more than a few weeks though... say a month and a half tops. But, using a plastic freezer proof storage bowl or container, or a heavy duty zip-top freezer bag works best. Thaw it in the refrigerator rather than room temperature. We've occasionally had heavy whipping cream that wouldn't whip after thawing, but it was still good for other cooking...

Thanks Clanad, it's good to know that. In future I'll try not to
buy more than I think I'll need. Appreciate your quick answer. Cream of broccoli soup on the menu tonight!
