Can the tomato sauces in jars, like Dolmio be frozen?
Say you open a jar and you only use a little of the sauce, it seems a waste if you're not going to use it up within a couple of days.

Yes, I do this quite often with tomato based sauces. I wouldn't freeze anything like a creamy sauce but tomato sauces are fine frozen. I usually use them within a month.

I had a reason for asking, as I forgetfully opened 2 jars by mistake.
as above. but dont put glass in the freezer. i freeze in sealable plastic bags. just about everything.

Don't know why anyone would want to freeze Dolmio - lol

You should try LLoyd Grossman or Sacla. Definitely worth freezing esp. the tomato and basil of both brands. Sacla usually keep for 2 weeks in the fridge after opening as well.
