I was doing roast pork for dinner tonight with roast potatoes and oven roasted vegetables.

Someone mentioned heating up apricot jam to make a sauce and use it on the pork. Sounded nice but what do you think....would the two work well together ?

I tried it once and it wasn't bad, I mixed it in with a bit of gravy. I wasn't very brave and probably could have used a bit more jam! Give it a go, try a little first to make sure you like it before lagging it on!
I am a great lover of fruit and meats mixed, but I must admit I will stick to the traditional apple sauce for pork related roasts.

Apricots (not in jam, though) go very nice in a turkey bake with ginger and a hot and sour sauce mix.

Nice one guys.....i'm going to give it a miss today mainly because i can't be bothered but i will do it sometime.

I do occasionally cook a pork joint in a foil package with lots of butter, tinned apricots with syrup and herbs and it is devine.

Any further suggestions are always welcome

Sorry...meant tinned peaches above but i presume apricots would work just as well.

Like you Joe the lion....i love fruit with my main course....i always put very thin slices of pineapple in my spag bol too. Just gives things that bit of sweetness.
